In-Your-Face Maple, Pepper Bacon Caesar Salad Recipe

Believe it or not, I’ve had many caeser salads in my day and have yet to devour a really tasty one. A caeser salad should be tangy with aromatic lemon juice, Worcestershire, Dijon mustard, and you should be able to taste the brininess of the anchovies and pungency of garlic. It should be a burst of creamy savoriness in your mouth with crisp buttery romaine and crunchy bread croutons. Its a harmonious symphony few get right. Here is my rendition of a caeser that is bold and intensely in your face with the classic flavours.

Ingredients: calories, carbs, proteins, fat, fiber, sodium,

  • 1 cup of rustic bread, cut into small cubes
  • maple syrup, 1/2 cup
  • bacon, 6 strips, rubbed with maple syrup and pepper
  • 2 cloves garlic, peeled, minced
  • 2 egg yolks, whole
  • 1/2 cup extra virgin olive oil
  • 3 tbsp lemon juice, freshly squeezed
  • 2 tbsp Worcestershire
  • 2 tbsp Dijon mustard
  • 1/2 cup Parmesan, grated
  • 1 large head romaine lettuce, washed, dried, diced/torn into small pieces
  • salt, to taste
  • pepper, freshly ground, to taste

Instructions to Yumminess:

1. Lightly oil a frying pan and brown bread chunks until golden brown and crispy. Sprinkle with salt and pepper. Set aside

2. Slather maple syrup on strips of bacon. Sprinkle black pepper and cook in oven until golden crisp

2. Beat egg yolks in large bowl until frothy. Slowly drizzle in extra virgin olive oil and emulsify until mayonnaise consistency

3. Incorporate in minced lemon juice, garlic, Worcestershire, Dijon mustard, salt, pepper and a third cup of Parmesan. Reserve remainder of cheese to toss in at the end. Mix well until thick consistency

4. Toss dressing thoroughly into romaine. Add crispy croutons, candied bacon and remainder of Parmesan. Toss well at table and serve immediately

Yield: 3 Gluttonous servings
